After relocating from Ming Ming's Kitchen, Tony and Minh welcomed Head Chef Hannis Tran into the kitchen at Annamese Brisbane. A Le Cordon Bleu alumnus, Hannis brings a wealth of experience, creativity, and passion to the table.


With great respect for traditional Vietnamese flavours, Hannis transforms classic dishes into fresh, modern creations that capture comfort and warmth, just like home cooking, while presenting them in a refined, contemporary way. Each plate is thoughtfully designed to please the senses: a combination of authentic ingredients with innovative techniques creates a dining experience that is both familiar and exciting.
